You can think of leaves as essentially small solar panels. Inside each leaf are millions of packages which are either red, yellow or green. The yellow packages contain xanthophyll while the orange packages contain carotene. The green hold Chlorophyll.

During warm months, the leaves use sunglight, water and carbon dioxide to produce glucose, which is basically tree food.

During the summer the green cells obscure the yellow and orange.

The tree brings water up from the ground through in a system which somewhat resembles veins in humans. When it gets cold, a thin layer of cells shuts off the flow of water and the chlorophyll cells start to die off, thus revealing the others that were there all along.

This doesn’t account for red or purple leaves though so what gives?

When the tree shuts down the water flow, it also shuts down the flow of sap, which in turn can trap sucrose in the leaves, which can then turn purple or red.
